It got me thinking of upgrading the lot - could I buy something like this and get it fitted by my mechanic without much trouble/hassel?

My thoughts are, will I need to upgrade with modified adaptors or supporting items I.e. brake servo etc to make it all work properly like the came with them
I'm siding with what ade555 has said

Calipers; go for it (just get them refurbed / rebuilt before you fit them); peace of mind then...

But 2nd hand/used discs & pads; no thanks. I'd want new discs & pads all round to ensure that they wear evenly as they should and don't have any corrosion from the off etc

You've no idea how those brakes were used in the past; whether there's bad pad deposits on the discs/pads glazed etc...

It's false economy to fit 2nd hand stuff like that

I'd also recommend decent braided lines like HEL and a full fluid flush & refill
