Siena is now offering a pork belly as a Spring/summer menu appetizer so I dropped in the other day -
The belly was cooked perfectly. Super moist, fatty, and tender in the center with a crisp exterior. The "potato foam" didn't really add anything to the dish and was grossly under-seasoned, though.
For Austin TX pork belly I still think Carillon remains king, but the cookery on the pork itself was pretty good at Siena.
