Homemade Chicken Pad Thai
My 1st try...some 'fusion' seasoning, flavors = taste great.
Yet still, ideas for enhancements on next dish; 'level up' improvement  Admittedly, rice noodles store bought. All other ingredients, freshly prepared.

It's the simple things: Wife browned some ground beef with whatever flavors she used, diced serranos, then wilted in some cabbage. I didn't even bother with the jasmine rice.
UNFORTUANTELY, my stomach wasn't awake when I left the house this morning, so no matching lunch today ; (

BILIL and I are going to dine on some personal pizzas as we sample various adult beverages tonight. I had a hankerin for pizza this morning and made the suggestion. There is a very slight chance that Pappy will be in the glass, it has happened there before.
Our wives will be out playing bingo . . .

No idea what it is. I'm sure it's been made before, not by me....
Potatoe cubes, Onions, mushrooms, sliced ham. All cooked. Same skillet I added the eggs. Cooked on stove covered 10 minutes. Added Cheddar cheese. Cooked another 5 minutes. Then the broiler a few minutes to brown things up. Topped with a bit of salsa.

I had some awesome takeout BBQ dry-rub ribs and some sort of Thai-seasoned cauliflower for dinner, and it amazingly did not raise my sugar at all. Guess I'll be forced, yes forced, to eat ribs more often.....
