Life has taught me that you need to take everything within moderation when you are not ill.
Any supplement taken in extreme will cause imbalances and issues.. yes that includes tons of coffee

I am replying to this because I am a physician. My suggestion is to see your family doctor and have them run a basic investigation. Low phosphorus levels can be secondary to a multitude of problems. I would never blame coffee or creatine for causing this. I don't have your medical history and I would not have to delve into this as I consider these things private matters. Suffice it to say that I think you need to be examined and tested to get to the root of why this is happening in you.
