Escarole and beans
Makes 2-3 servings. 50-60 minutes to prepare.
1 head escarole
3 slices bacon, diced
1 white onion, diced
2 cloves garlic, minced
1 can cannellini beans with liquid
1/3 cup chicken stock
Drizzle of EVOO
Salt and pepper to taste
1/4 cup grated parmesan
Chop and wash escarole in a large bowl filled with water.
Heat heavy skillet or dutch oven. Fry bacon until fat is rendered, reserve cooked bacon.
Fry onions in fat with a drizzle of EVOO until soft. Add garlic and cook until fragrant.
Add washed and chopped escarole and bean liquid and simmer until greens are tender and some liquid has evaporated. Adjust seasoning.
10 minutes before serving add the beans and adjust seasoning. Heat beans through.
Garnish with bacon and grated parmesan and serve.

Outstanding deep sea fishing last Sunday with ole Navy friends off far-side of Santa Catalina island [~80 nm from SoCal coastline].
Overall, catches not too shabby for a 1-day excursion.
Personally pleased with my haul - - scored California Yellowtail, White Seabass, Rockfish…one bud shared a prodigious Bluefin Tuna.
Finally today, chance to prep, partake, enjoy 😋

Last night planned dinner, Burger; Beef/Mild Italian Sausage Pattie, Cheese, Bacon, Tomato, Onion, Dijon and Mayo.
Stay tuned for my "Eternal Regrets" pizza this evening. My dough is currently out of the freezer, thawing and rising. All ingredients have been selected. Safety goggles, Nomex gloves and fire extinguisher on stand-by. It will be one for the books.

4,,, Baklouti pepper extract paste from Tunisia mixed with ¼ oz. Carolina Reapers (2.2 million SHU) coating the dough.
5... TNT pepperoni, casing removed and thinly sliced soaking in boiling water for a few minutes.
6... 9-1-1- on speed dial.
Very hot and delicious. I can still feel my extremities.
